Certain ‘Superfoods’ are especially good for the summer as they contain nutrients that can help nurture your skin and protect it from sun damage. This delicious sandwich is a real powerhouse of nutrition and tastes fabulous. It takes minutes to make – perfect for busy people who want a lighter bite that still delivers real nutritional punch.

Choose British chicken with the Red Tractor and Union Jack on pack and you’ll know that you’re getting fresh, local birds that are fully traceable back to independently inspected British farms. Or ask your butcher if it’s British.

Ingredients

1 Great British Chicken breast, cooked and skinned
2 thin slices wholemeal bread
knob of butter, softened
¼ ripe avocado
squeeze of lemon juice
2 slices proscuitto
handful watercress
1 vine ripened tomato, sliced

Method

1. Spread the bread lightly with a little softened butter.

2. Place ¼ ripe avocado (it has to be ripe, otherwise it’ll be bitter and revolting) and a squeeze of lemon juice in a small bowl and mush with a fork until smooth and creamy. Spread this on to one of the slices of bread.

3. Slice the chicken and place on top of the avocado. Add the prosciutto (remove the visible fat), and a couple of leafy stems of watercress. Finally add the tomato.

4. Top with the second slice of bread and tuck in!

The Superfood Sandwich is packed with goodness:

  • Watercress - Contains Vitamin C, an antioxidant that helps reduce free radical damage our skin can sustain from sunshine. It is also rich in iron; great for blood cells
  • Tomatoes - Contain nutrients such as beta carotene, Vitamin E and are rich in lycopene which protects against a range of cancers
  • Wholemeal Bread - Boosts the growth of positive bacteria in the gut, helping to reduce the risk of developing cancer and heart disease
  • British Chicken - Not only is it low in fat, light to digest and full of energy-giving protein, chicken also lowers the overall GI rating of the sandwich by slowing the absorption of carbohydrate from the bread
  • Avocado - Good source of monounsaturated fat and also contains Vitamins A, B, C and E as well as fibre
  • Proscuitto Ham - Boost of flavour that means there's no need to add salt
